Who is Dolene?

Dolene is a 7000 lb wood-fired brick oven built inside of a pony trailer. But if you search deep in her hearth, you'll find a mission. The idea was inspired by a simple, beautiful tortilla. I was at an event where a chef was pressing fresh masa and cooking the tortillas on a wood-fired plancha. The Chef was able to serve them to patrons within minutes of cooking. Witnessing such a display of intention made me sad to not be able to share my  breads and pastries in the same manner. As bakers we are taught that bread should cool before enjoying the full complexity of flavor. However, some of my favorite taste memories involved eating a piping hot loaf of sourdough right out of the oven. Typically the one that slipped off the peel and fell on the floor. The crisp, shattering crust juxtaposed by the custardy crumb and the golden butter dripping down my chin. This was an experience that I needed to share. Dolene has made it possible for me.
